Ingredients:
• 1 banana mashed
• ½ tablespoon of honey
• 75 grams of rolled oats
• 600 grams of whole wheat flour + extra for dusting
• 1 teaspoon of baking powder
• Small handful of dried cranberries
• 1 egg beaten
• 300 mls of water
• Grease for baking trays
Method
• Preheat the oven to 180oC or 160oC for fan ovens
• Lightly grease 2 large baking trays
• Mix together the water, mashed banana, honey and the beaten egg
• Add the whole wheat flour, baking powder and rolled oats. Sir until thoroughly combined either by hand using the wooden spoon for about 5 minutes or with an electric mixer (on medium speed) for a couple of minutes using the dough hook
• Turn out the dough onto a floured surface and knead for 5/6 minutes (the dough should be much less sticky. If still too sticky, knead for a couple of minutes more)
• Roll out the dough to about ¼ inch thickness and using a biscuit cutter, cut into shapes
• Place the dough shapes on the greased baking trays
• Take the dried cranberry pieces and gently push 3 to 4 of the pieces into the top of each of the dough shapes
• Bake in the preheated oven for 15/20 minutes or until a light golden brown colour
• Turn the oven off but leave the shapes in the oven to crisp up slightly for around 30 minutes
• Transfer to a wire rack to cool completely
